Washed Processing: In the washed process, coffee cherries are pulped to remove the outer fruit layer. The beans are then fermented, washed, and dried. This method tends to result in cleaner, more vibrant flavours, as the fermentation can remove some of the fruit’s sweetness and acidity.

Natural Processing: On the other hand, natural processing involves drying the whole coffee cherries in the sun, allowing the beans to absorb sugars and flavours from the fruit. This imparts the coffee a fruity, sweet, and often wild character. Natural processing is more common in regions with limited water resources and is known for its exotic and unique profiles.

Roasting: Art and Science

Roasting is where the transformation from green coffee beans to aromatic, flavorful coffee occurs. It’s a complex blend of art and science that requires precision and skill. Roasters bring out the unique flavours hidden within each batch of beans while maintaining a delicate balance between acidity, body, and aroma. The roast level plays a crucial role in coffee quality. A light roast retains more of the beans’ inherent flavours and highlights their origin characteristics. In contrast, a dark roast may bring out smokey, chocolaty, or nutty notes but can also obscure the bean’s natural attributes.

Freshness: The Essence of Quality

Freshness is perhaps the most crucial aspect of coffee quality. Coffee beans are at their best within a few weeks to a month after roasting. Over time, beans undergo a process known as degassing, where they release carbon dioxide. While degassing is essential for brewing, it also causes a loss of aroma and flavour.

The precision of the brewing process, including water temperature, grind size, and extraction time, is vital in defining coffee quality. Water quality is also crucial, as the minerals in water can impact the extraction of flavours from the coffee grounds.
