Ingredients

  • 1 kilogram of multigrain pizza dough (allow it to sit at room temperature for 30 minutes before rolling)
  • ⅔ cup filtered water
  • ½ cup raw cashews*
  • One tablespoon of nutritional yeast
  • One tablespoon of arrowroot powder
  • One tablespoon of apple cider vinegar
  • ½ teaspoon sea salt, plus more for seasoning
  • Two tablespoons of olive oil
  • Three minced garlic cloves
  • Three sliced ripe tomatoes
  • Balsamic Reduction
  • Fresh basil leaves, sliced thinly.
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat the oven to 200 Celcius. Use parchment paper to line a round, vented pizza pan.
  2. Roll the pizza dough at least a 38-centimetre circle on a lightly floured work surface.
  3. While the pizza bakes, mix the following ingredients below for 2 minutes on high or until it is completely smooth.
  • Filtered water
  • Cashews
  • Nutritional yeast
  • Arrowroot powder
  • Apple cider vinegar
  • Sea salt
  1. Fill a saucepan halfway with the mixture. Set the heat to medium & constantly whisk for 3 to 5 minutes, until the mixture thickens. Do not overheat & allow it to cool off slightly.
  2. Brush the olive oil on the par-baked pizza dough and sprinkle with the garlic and sliced tomatoes on top and add the sauce.
  3. Drop spoonfuls of cashew mozzarella across the surface of the pizza with a tablespoon.
  4. Put back the pizza and bake for another 8 to 14 minutes until done to preference.
  5. Allow to cool off after removing from the oven. Drizzle with fresh basil & balsamic reduction. Season with sea salt & crushed red pepper flakes to taste.
  6. Serve immediately.

If you’re not using a high-speed blender, soak cashews in water for 2 hours or boil for 10 minutes to soften.
